                                                 My Grandmother’s Potato Pancakes
With everyone experiencing cabin fever, what could be more satisfying than some old fashion comfort food like grandma used to make. Remember in the “old” days when families sat together at the dinner table, talked, laughed and just enjoyed each others company? Well I do and my fondest memory is of my grandmother potato pancakes. So I thought I’d share her recipe with anyone who wants to go back to those good old days.
Potato Pancakes
Preheat oven to 350 degrees
Melt  2 Tbs of Crisco in a 9x13 pan
 4-5 large potatoes- grated
1 egg- beaten
2 Tbs flour
1 med onion- grated
1 tsp salt
1 tsp pepper
Mix all ingredients together and form into balls.
Place each ball in the Crisco pan and flatten with spatula into a pancake
Bake for 15 minutes, then turn and bake for 15 more or until golden brown.
Makes 6-7 pancakes.
